Did you know that peppercorns come in different colors? That's because they are handled differently during harvesting and processing. For example, green peppercorns are plucked a little early, red peppercorns are picked at their peak ripeness, and black peppercorns get their dark hue by sunbathing for a few days. And when it comes to blending mixed peppercorns, pink peppercorns (also known as Schinus terebinthifolius) are used for a pop of color, instead of the fully ripened red Piper nigrum. Just a heads up - if you're allergic to nuts, pink peppercorns may cause a reaction.
